Cajun Shrimp Dirty Rice
- 1 cup brown rice
- 1 ½ cup chopped onion
- 1 TBSP chopped garlic
- ¼ cup corn
- 2 slices turkey bacon
- 6 shrimp (peeled & deveined)
- 2 chopped scallions
- 1 TBSP Cajun spice
- Olive oil spray
- Kosher salt/cracked pepper
- ½ cup diced Red bell pepper & green pepper
*In a hot sauté pan, heat spray of olive oil spray, add turkey bacon, onion, shrimp, peppers & let cook for one minute on each side, add corn, Cajun spice & brown rice. Sauté & combine for 3 minutes.
Coffee rubbed Pork Tenderloin w/Avocado Tomato Salsa
- 1 tsp. French roast coffee grounds
- 1 tsp. chili powder
- 1 tsp. kosher salt
- ¼ cup diced Avocado
- 3 TBS diced tomatoes
- 1 tsp. rice wine vinegar
- Chopped cilantro
- Olive Oil Spray
Dredge pork medallions in dry rub on each side.
In a hot sauté pan, heat spray of olive oil. Sauté lightly, pounded pork tenderloin medallions.
Cook for 2-3 minutes each side. Plate with fresh salsa.
