Sample Recipes

Cajun Shrimp Dirty Rice

  • 1 cup brown rice
  • 1 ½ cup chopped onion
  • 1 TBSP chopped garlic
  • ¼ cup corn
  • 2 slices turkey bacon
  • 6 shrimp (peeled & deveined)
  • 2 chopped scallions
  • 1 TBSP Cajun spice
  • Olive oil spray
  • Kosher salt/cracked pepper
  • ½ cup diced Red bell pepper & green pepper

*In a hot sauté pan, heat spray of olive oil spray, add turkey bacon, onion, shrimp, peppers & let cook for one minute on each side, add corn, Cajun spice & brown rice. Sauté & combine for 3 minutes.

Coffee rubbed Pork Tenderloin w/Avocado Tomato Salsa

For rub:

  • 1 tsp. French roast coffee grounds
  • 1 tsp. chili powder
  • 1 tsp. kosher salt

For salsa:

  • ¼ cup diced Avocado
  • 3 TBS diced tomatoes
  • 1 tsp. rice wine vinegar
  • Chopped cilantro
  • Olive Oil Spray

Dredge pork medallions in dry rub on each side.
In a hot sauté pan, heat spray of olive oil. Sauté lightly, pounded pork tenderloin medallions.
Cook for 2-3 minutes each side. Plate with fresh salsa.
