Wedding At Whalehead Club in Corolla NC – Outer Banks Catering

Here is the newest video of the Chef Wes and the Red Sky doing a catering event at the Whalehead Club. And as a special treat, Chef Wes wrote the accompanying article after the video himself!

“What does the heat of August, the stillness of the Currituck Sound, and the aroma of summer’s sweet harvest coupled with the aroma of an out door grill indicate? Love is in the air and the Red Sky cafe is at the Whalehead Club to satisfy its appetite.

Saturday afternoon, 200 family and friends from Williamsburg and adjoining locations converged to celebrate in the wedding!

The jubilation of the wedding party and guests were paired with the peaceful tranquility of the historic Southern landscape, in the shadow of the Currituck Lighthouse under a tent and the Carolina blue sky.

Kitchen Impossible has nothing on the Red Sky. The menu had local scallops and a mango BBQ to Currituck crabcakes, grilled beef tenderloin, to charred rare tuna. There was also grilled asparagus, summer tomato steaks dotted with fresh mozzerella and basil and sweet balsamic molasses.

And what’s a party without some spirits? Chardonnay to Firefly’s, the cocktail and service were beyond reproach.

The food, the drink, and the service were all supplied by the Red Sky Cafe and delivered with a second helping of Southern Hospitality!!

Why would anyone settle for less?

The Outer Banks is a popular place for big events.  In fact, it is tailor made for weddings and parties.

When you have an important event coming up, how should you choose a caterer?

Here are a few tips:

  • Experience.  How long have they been catering both large and small parties?
  • Recommendations/Popularity. Are they the first choice for everyone else?  Do their past clients plan to use them in the future?
  • Food Sources. Where do they acquire their raw ingredients?  The choice of food sources will be easily tasted in the finished product.
  • Tastings. Do they offer the opportunity to taste the dishes before you make a final decision?
  • Staffing. Do they offer a full staff?  Chefs and wait staff are a must, but what about the clean up?
  • Clean up. You don’t want a dirty kitchen after the party.  Make sure this is part of your catering package.
  • Is your party special to them? You don’t want a caterer who is just grinding out jobs.  Ask your prospective caterer exactly how they will make your party an event to remember.
  • The unexpected. Can they handle any problems that occur?  Ask your caterer about problems they have had at past events and how they dealt with those problems.
  • Backup. A backup service (usually a restaurant) will give them people and supplies to call on in case of an emergency.

Only use the best for your special occasion.  Remember, a great party will create memories for a lifetime.

Outer Banks Wedding Guide: Scrumptious Catering!

After the huge success of our first outer banks wedding catering video, we got lots of requests to post more videos, and give more detailed tips on what it really takes to run a successful obx wedding.

This time, I caught up with Chef Wes and his wife Cindy at the Comfort Inn hotel in South Nags Head – they were catering for 150 guests of this really fun local couple.

Here’s an insider secret: events at the Comfort Inn are usually ran by their in-house catering staff, but the bride and groom requested that Red Sky catered for them.

And of course, Wes, Cindy, Jamie, and their entire staff transformed the hotel in a multi-level wedding celebration ;)

The first act, that started right after the wedding ceremony, took place at the beautiful pool deck, overlooking the ocean (where I interviewed Wes and Cindy) and they had fruits, asiago cheese dip, and homemade garlic crostinis while the bride and groom were taking pictures.

Then, the party moved downstairs, where the room had been beautifully decorated (more details coming soon), and where 2nd act took place.

I got there moments before they got to second act, and they were having a blast – Jack and Victor were keeping everybody happy at the bar, and Chef-de-partie Jamie made sure the buffet (delicious!) kept everybody satisfied.

Secrets To A Successful Wedding Catering – By Chef Wes & Cindy Stepp

This video is the continuation of the chat I had with Chef Wes and his wife Cindy during a gorgeous wedding in the Whalehead Club (Corolla, NC).

First, Chef Wes explains why the Red Sky catering services have established themselves as the premiere wedding caterer in the Outer Banks:

  • Listening to what the bride and groom want (sounds simple, right? It’s not. Most caterers have strict menus, and only modify it according to # of guests);
  • Customized to fit their needs – accommodating exotic tastes, international cuisine, and cooking the way the guests want it;
  • Beautiful, unique presentation – as you can see from this obx wedding video, far away from boring wedding food.

Then, his wife Cindy explains to us what brides-to-be (or catering planners) should look for when hiring a caterer on the Outer banks:

  • Do your due diligence – call different professionals and check their availability , visit their restaurants, check their Kitchens (if possible)
  • Ask for references – many caterers will provide you with a list of past clients you can call, or simply go online and Google them; if they have no web presence, beware!
  • Hire an experienced caterer that is familiar with your venue – places like the Whalehead Club have no electricity or running water; a rookie professional may not be ready to deal with unforeseen obstacles like having to wash dishes.
  • Look for a caterer that can “live in the solution.”
