“What does the heat of August, the stillness of the Currituck Sound, and the aroma of summer’s sweet harvest coupled with the aroma of an out door grill indicate? Love is in the air and the Red Sky cafe is at the Whalehead Club to satisfy its appetite.

Saturday afternoon, 200 family and friends from Williamsburg and adjoining locations converged to celebrate in the wedding!

The jubilation of the wedding party and guests were paired with the peaceful tranquility of the historic Southern landscape, in the shadow of the Currituck Lighthouse under a tent and the Carolina blue sky.

Kitchen Impossible has nothing on the Red Sky. The menu had local scallops and a mango BBQ to Currituck crabcakes, grilled beef tenderloin, to charred rare tuna. There was also grilled asparagus, summer tomato steaks dotted with fresh mozzerella and basil and sweet balsamic molasses.

And what’s a party without some spirits? Chardonnay to Firefly’s, the cocktail and service were beyond reproach.

The food, the drink, and the service were all supplied by the Red Sky Cafe and delivered with a second helping of Southern Hospitality!!

Chef Wes cooks the “Bleu Moo”, a featured menu item and a popular Father’s Day choice.  This dish is guaranteed to please any man (and everyone else).

Chef Wes starts with prime cuts of filet Mignon.  These are seasoned with kosher salt and fresh ground black pepper, then sautéed in olive oil, garlic, and sun dried tomatoes.  Cabernet is added to the pan to give the filet an additional rich flavor.

He then places bleu cheese on top of the filets and allows it to warm, but not quite melt, as the beef finishes cooking.  The filet Mignon is served medium rare atop fresh spinach, summer tomato steaks, and sautéed Portabella mushrooms.

(Personal note – If you have never had prime beef with fresh spinach, you are missing one of the greatest flavor combinations on earth.)

If this wasn’t enough, fresh shrimp is sautéed in butter along with the filet Mignon.  A touch of fresh cream is added, and then the mixture is reduced to become a delicious sauce which tops Chef Wes’ creation.

This incredible meal is finished with stripped scallions for a beautiful presentation.

Chef Wes Stepp with Herb Gordon

Chef Wes Stepp just finished shooting for the TV show Weekend Fisherman.  Thirteen years and still going strong, Weekend Fisherman is hosted by charter boat captain Herb Gordon and is well known on the Outer Banks.  Red Sky Café’s Outer Banks wedding caterer was thrilled to join Herb and camera Tony to cook up a fabulous meal using local ingredients.

Chef Wes made a return appearance on captain Herb’s Weekend Fisherman and once again presented a mouthwatering meal.  Using only fresh Currituck vegetables, Chef Wes seared butterflied Waho steak and served it on Summer Steak tomatoes.  A delicious cucumber crème fresh provided a tantalizing highlight for this perfect Outer Banks summertime meal.

The trip up to Carova went without a hitch, as Chef Wes’ 4×4 glided effortlessly across the sand. Once we arrived at the Mark Twain, a monstrous house in Carova that is a popular spot for weddings, we found the Red Sky staff in full swing unloading trucks and setting up shop. Chef Wes had his young protege  Graham (the one on the grill in the video) in charge, and everything was proceeding according to plan.

However, the best laid plans of mice and men… As Chef Wes was starting to cook the pasta, he quickly noticed the ovens were not heating at all. He would be able to cook the meat on top of the stove, by ingeniously converting two pans into an impromptu dutch oven, but what about the pasta? Thankfully, with an experienced eye, he spotted three outdoor gas grills sitting unused on the porch.

While only two had tanks of propane, that was more than enough to cook the pasta the way Chef Wes wanted. Who’s ever heard of making pasta on a grill? It’s this kind of ingenuity that makes Chef Wes the premiere caterer around. After the fiasco with the ovens, Chef Wes stayed to make sure everything else went off without a hitch. He even managed to feed everyone when there ended up being a number of unexpected guests.

We eventually made it to the other catering events, but they had already pretty much finished by then. That’s why Chef Wes only has dependable, highly skilled fellow chef’s working for him; to ensure that no matter what, the job gets done professionally and everyone’s happy at the end of the night. We finally returned to the Red Sky Cafe at 10, worn and weary, but satisfied that Chef Wes’ extensive streak of perfectly catered events would remain unbroken yet again.Similar Posts:

Experience- We discussed the importance of hiring an experienced wedding caterer, but it never hurts to reiterate a valid point. Things can go wrong when you are away from familiar ground, and it’s important to have someone reliable who can handle any problems that may occur. Chef Wes has been in the restaurant business since he was thirteen. At this point, there isn’t much he hasn’t seen.

The Staff- If you’ve been to the restaurant, you know the Red Sky Café staff are some of the friendliest and helpful people you could have serving you food. And these traits apply equally to the catering staff as well. During your event, the servers all wear matching uniforms, and provide a professional service that’s hard to beat.

Chef Wes has been in the food industry since he was thirteen. He started as a busboy, and worked his way up the ladder to where he is now, while earning a college degree in psychology.  He loves his profession and is grateful to have had the opportunity to be where he is now.

But more pertinent to this conversation is how Chef Wes views catering. He feels caterers must be like the Marine Corps of the food industry, able to adapt and overcome. As he puts it, when you are on a catering job, your no longer in your home turf. Your the away team. If something goes wrong, you need to be able to deal with it in a calm and controlled manner. Only experience can teach you the tricks you need to know.

At a recent wedding Chef Wes catered, the ovens at the house would not work. There was quite a bit of food to cook, and no way to cook it. After a few minutes of thought, Chef Wes put the two grills outside to work cooking pasta. Everything turned out fine. Later on, when everyone was eating, it looked like some of the food was about to run out, due to extra people coming to the wedding. Chef Wes was able to rearrange the meal, so there actually ended up being leftovers.

These are just a small example of the kinds of problems caterers run into everyday. Chef Wes is never flustered, he just solves the problem. And this isn’t just for caterers. It applies equally to everyone at a wedding. The pictures on this page are all courtesy of Mary Basnight, an Outer Banks wedding photographer. She has to be experienced as well; she can’t stop a wedding because her camera breaks. She needs to have backups and emergency plans, which she certainly does.
