New Year, new resolutions…. But it’s already February!

Well, Chef Wes is determined to help you stick to your resolutions this year – starting with a diet rich in Outer Banks Seafood . This time, he shows you how to pick fresh fish, exactly what to look for when buying the fillets, and how to put together a quick, healthy, and delicious Mahi Mahi open-face Goat Cheese sandwich.

On this video you’ll also get to know Wes’s son, Taylor, who he’s been training to become the head chef at the restaurant. Taylor is already the lead chef at Wes’ Outer Banks Seafood Company restaurant in Corolla, which will be open again this summer.

The recipe is quick and simple, and you’re welcome to customize it to your liking.

Here are the main ingredients:

1 fresh Mahi Mahi fillet

Basil pesto (preferably homemade)

Goat cheese

Bean sprouts

Summer tomatoes

And to top it off…

Fresh Guacamole

Cilantro Sour Cream

Are You Coming To The Outer Banks Wedding EXPO This Weekend?

The OBX Wedding EXPO showcases the top vendors on the beach

2010 is starting with the biggest Outer Banks Wedding Association EXPO ever!

This Saturday and Sunday (9th & 10th) is wedding weekend in the Outer Banks as the OBWA and over 130 local vendors host the biggest destination Wedding event in North Carolina. The EXPO starts Saturday at 10am with a tour of popular wedding venues here on the beach, as well as restaurants, spas, and – of course – the top Outer Banks wedding caterers.

On Sunday the big party starts at 11am: all 130 vendors will have their stations set up at the First Flight High School (map here), and we’re preparing an extravagant display this year: Cindy Stepp is in charge of decorations, and Chef Wes & Chef Jamie will have a delicious assortment of fresh local cuisine available.

As usual, the Red Sky will have stations set up at each of the tour’s locations on Saturday, where our chefs will cook appetizers to order, such as our famous Shrimp ‘N Grits and even sushi.

Wedding Tasting At Red Sky – Outer Banks’ Top Catering Services!

Yesterday the Red Sky Cafe hosted a wedding tasting for Jen & John, the “reality Bride & Groom”.

They’re recording every step of their wedding planning for an online documentary, and they chose the Red Sky to cater for their wedding.

To accommodate everybody’s request, Chef Wes prepared a huge tasting platter – as you can see on the video, the bride and groom did not expect such an abundant tasting.

According to Chef Wes Stepp, tastings usually have an average of 7-8 dishes, and he doesnt skim on the servings. His wife Cindy says that many times the couple is so busy during the wedding that if they dont enjoy the food during the tasting they may not eat it at all!

We wish Jen & John the best, and look forward to their wedding next year.

Seafood is a Thanksgiving tradition not only in the Outer Banks

If you’ve never thought of Seafood & Thanksgiving going together, let me guide you through some Pilgrim’s history:

Rumor has it that the Pilgrims’ harvest included oysters – this delicate, luscious seafood (which is abundant in the Outer Banks) stimulated appetites and made its mark as a classic stuffing for the Turkey.

Here’s a quick Outer Banks Seafood Thanksgiving recipe for Oyster Stuffing:

OYSTER STUFFING

1 pint oysters
1/2 cup chopped celery
1/2 cup chopped onion
1/4 cup butter or other fat, melted
4 cups day old bread cubes
1 tablespoon chopped parsley
1 teaspoon salt
Dash poultry seasoning
Dash pepper

Drain oysters, saving liquor, and chop. Cook celery and onion in butter until tender. Combine oysters, cooked vegetables, bread cubes, and seasonings, and mix thoroughly, If stuffing seems dry, moisten with oyster liquor.

Makes enough for a 8-pound bird.

But that’s clearly not enough seafood for a real Outer Banks Thanksgiving – so try this recipe as well:

Rockfish with crab and old bay cream sauce

Ingredients

1 1/2 pounds rockfish or striped bass fillets
2 1/2 teaspoons McCormick® Old Bay with Garlic & Herb Seasoning, divided
3 tablespoons butter, divided
2 tablespoons white wine
1 green onion, finely chopped
1 cup heavy cream
2 teaspoons Dijon mustard
8 ounces backfin or lump crabmeat

Directions

Heat large skillet on medium-high heat 3 minutes. Melt 2 tablespoons butter in skillet. Season flesh side of fish with 1 1/2 teaspoons Old Bay with Garlic & Herb Seasoning. Place fish, skin-side up, in skillet. Cook 5 minutes, turning fish after 3 minutes. Remove fish from skillet; keep warm. Reduce heat to medium.

Stir wine into skillet, scraping bottom to loosen browned bits. Add remaining butter and green onion; cook and stir 1 minute. Gradually stir in cream.

Stir in mustard and remaining Old Bay with Garlic & Herb Seasoning. Simmer 2 minutes or until slightly thickened. Stir in crabmeat. Return fish to skillet; cover. Cook 3 minutes longer or until fish flakes easily with a fork.
