New Year, new resolutions…. But it’s already February!

Well, Chef Wes is determined to help you stick to your resolutions this year – starting with a diet rich in Outer Banks Seafood . This time, he shows you how to pick fresh fish, exactly what to look for when buying the fillets, and how to put together a quick, healthy, and delicious Mahi Mahi open-face Goat Cheese sandwich.

On this video you’ll also get to know Wes’s son, Taylor, who he’s been training to become the head chef at the restaurant. Taylor is already the lead chef at Wes’ Outer Banks Seafood Company restaurant in Corolla, which will be open again this summer.

The recipe is quick and simple, and you’re welcome to customize it to your liking.

Here are the main ingredients:

1 fresh Mahi Mahi fillet

Basil pesto (preferably homemade)

Goat cheese

Bean sprouts

Summer tomatoes

And to top it off…

Fresh Guacamole

Cilantro Sour Cream

The Outer Banks Thanksgiving Feast At The Red Sky Cafe

Watch as Chef Wes Stepp introduces us to the scrumptious Thanksgiving feast at the Red Sky Cafe.

Thanksgiving at Red Sky has been a tradition for years, and the restaurant usually has full capacity taken by Noon, but I was able to get there early and have Wes walk us through his entire set up.

The abundance of treats made it REALLY hard to decide what to eat and when to eat it ;)

Props to the house-smoked salmon w/ dill cream – the salmon was melting on my mouth, had a rich smokiness to it, which the dill cream totally complemented. Also, all the different oysters preparations were right on the spot – you could see that they were really fresh.

For those of you that were there, THANK YOU. The entire staff at Red Sky is thankful for being able to share this special day with you.

In the Outer Banks, that old adage, ‘Never mix business with pleasure’ is extremely hard to enforce. If you’re in charge of planning a corporate event on the beach, keep on reading:

The following tips will assist you in your mixing of business and pleasure with enjoyable results.

The first thing you will want to consider in the planning process is the food. Often, the potential success of any corporate party or event is determined by the quality of the food. Duh – the Outer Banks has a plethora of fresh, delicious ingredients to be featured, make use of them!

Alleviate the burden and hire a catering service. When you hire a catering service to cater your corporate event, you allow yourself and your co-workers the opportunity to plan and focus on the many details and the intention of your corporate event. But know how to hire an outer banks caterer with confidence!

Before calling your catering service, consider the mood of your corporate event. Is there a theme? Is your corporate event casual or elegant? Do you need the catering service to assist you with a venue? Here we touch a complicated topic for the beach – the lack of decent convention center.

Many hotels will offer that run-of-the-mill convention room, but you’ll probably have to digest their accommodation prices, room fees, and swallow their catering service. A common solution, depending on the size of your event, is to rent a big house on the beach and have everybody stay there. In a bigger house, you can even run small-setting seminars.

A quality catering service can provide all the amenities such as tables, chairs, and tents, to make your corporate event as successful as possible. You want to ensure that your event is not only enjoyable but also memorable.

Consider the following points:

  • What is your event’s intention? Do you want to reveal a new service or product? Perhaps your corporate event is a thank you party for clients and vendors?
  • Prepare your guest list and set a date and time. Traditionally, two and a half to three hours is appropriate for a corporate event.
  • Design your invitation and request an RSVP.
  • Consider hiring a bartender if you plan to serve alcohol. Make certain your bartender is covered for liquor liability insurance.
  • Think about your menu options and discuss them with your catering service. Consider your guests that may have special dietary needs.

Plan ahead, remain focused on your intention, enjoy the company of your guests and relax.
