Wedding At Whalehead Club in Corolla NC – Outer Banks Catering

Here is the newest video of the Chef Wes and the Red Sky doing a catering event at the Whalehead Club. And as a special treat, Chef Wes wrote the accompanying article after the video himself!

“What does the heat of August, the stillness of the Currituck Sound, and the aroma of summer’s sweet harvest coupled with the aroma of an out door grill indicate? Love is in the air and the Red Sky cafe is at the Whalehead Club to satisfy its appetite.

Saturday afternoon, 200 family and friends from Williamsburg and adjoining locations converged to celebrate in the wedding!

The jubilation of the wedding party and guests were paired with the peaceful tranquility of the historic Southern landscape, in the shadow of the Currituck Lighthouse under a tent and the Carolina blue sky.

Kitchen Impossible has nothing on the Red Sky. The menu had local scallops and a mango BBQ to Currituck crabcakes, grilled beef tenderloin, to charred rare tuna. There was also grilled asparagus, summer tomato steaks dotted with fresh mozzerella and basil and sweet balsamic molasses.

And what’s a party without some spirits? Chardonnay to Firefly’s, the cocktail and service were beyond reproach.

The food, the drink, and the service were all supplied by the Red Sky Cafe and delivered with a second helping of Southern Hospitality!!

Catering with Chef Wes in Carova Off Road Country!

This day started as a trip to three different weddings! The original plan was to leave at 3 o’clock, hit the Mark Twain in Carova, then the Whalehead Club, and wrap it up at the Saltaire in Duck by 8 o’clock. However, nothing is ever that easy in the world of catering! Chef Wes Stepp of the Red Sky Cafe proved why he is the number one wedding caterer on the  Outer Banks as he averts near disaster and shows why an experienced caterer is best.

The trip up to Carova went without a hitch, as Chef Wes’ 4×4 glided effortlessly across the sand. Once we arrived at the Mark Twain, a monstrous house in Carova that is a popular spot for weddings, we found the Red Sky staff in full swing unloading trucks and setting up shop. Chef Wes had his young protege  Graham (the one on the grill in the video) in charge, and everything was proceeding according to plan.

However, the best laid plans of mice and men… As Chef Wes was starting to cook the pasta, he quickly noticed the ovens were not heating at all. He would be able to cook the meat on top of the stove, by ingeniously converting two pans into an impromptu dutch oven, but what about the pasta? Thankfully, with an experienced eye, he spotted three outdoor gas grills sitting unused on the porch.

While only two had tanks of propane, that was more than enough to cook the pasta the way Chef Wes wanted. Who’s ever heard of making pasta on a grill? It’s this kind of ingenuity that makes Chef Wes the premiere caterer around. After the fiasco with the ovens, Chef Wes stayed to make sure everything else went off without a hitch. He even managed to feed everyone when there ended up being a number of unexpected guests.

We eventually made it to the other catering events, but they had already pretty much finished by then. That’s why Chef Wes only has dependable, highly skilled fellow chef’s working for him; to ensure that no matter what, the job gets done professionally and everyone’s happy at the end of the night. We finally returned to the Red Sky Cafe at 10, worn and weary, but satisfied that Chef Wes’ extensive streak of perfectly catered events would remain unbroken yet again.

You would think hiring an Outer Banks wedding caterer would be easy. Find a place that cooks good food, then hire them to cook for you. What could be simpler? Unfortunately, hiring a caterer is going to be a little more involved. You need to discuss menu’s and plan everything, and etc., etc. And while you already know Chef Wes Stepp and the Red Sky Café are going to be a hit with your guests, here are few of the reasons why.

The Tasting- Chef Wes provides a tasting for every potential client, comprised of all the types of food he considers their specialty. And the best part about the tasting is it’s free for the bride to be!

Things can go wrong when you are away from familiar ground, and it’s important to have someone reliable who can handle any problems that may occur. Chef Wes has been in the restaurant business since he was thirteen. At this point, there isn’t much he hasn’t seen.

Wedding Rehearsal Dinner in Corolla, NC – Red Sky Cafe’s Catering

This was a real delight! Chef Wes Stepp and the Red Sky Cafe staff catered a rehearsel dinner in Corolla for around 50 people. It was a wonderful night for eating outdoors, and the Red Sky staff made the most of it!

With a station setup serving shrimp and grits, plus a sidebar with barbecue, chicken, roasted veggies, and plenty more, no one went hungry. The food was exquisite (as always!) and people were lining up 10 deep to get to the shrimp and grits!

After all th guests had a chance to get their fill of everything, a dessert bar was setup that offered vanilla and chocolate ice cream,  all kinds of different toppings-including chocolate and raspberry sauce- plus some amazing home made fudge brownies. A few enterprising guests were even combining the two to make a truly decadent hot fudge brownie sundae.

With food like this, it’s not surprising Chef Wes is being booked up fast. The season is definitely upon us, so if you want the Red Sky Cafe to cater your wedding, or any event you like, you better call now. The Red Sky Cafe caters weddings, parties, reunions, bar mitzvahs, whatever. Chef Wes can make a menu for any occasion, even a kosher one.
