Wedding At Whalehead Club in Corolla NC – Outer Banks Catering

Here is the newest video of the Chef Wes and the Red Sky doing a catering event at the Whalehead Club. And as a special treat, Chef Wes wrote the accompanying article after the video himself!

“What does the heat of August, the stillness of the Currituck Sound, and the aroma of summer’s sweet harvest coupled with the aroma of an out door grill indicate? Love is in the air and the Red Sky cafe is at the Whalehead Club to satisfy its appetite.

Saturday afternoon, 200 family and friends from Williamsburg and adjoining locations converged to celebrate in the wedding!

The jubilation of the wedding party and guests were paired with the peaceful tranquility of the historic Southern landscape, in the shadow of the Currituck Lighthouse under a tent and the Carolina blue sky.

Kitchen Impossible has nothing on the Red Sky. The menu had local scallops and a mango BBQ to Currituck crabcakes, grilled beef tenderloin, to charred rare tuna. There was also grilled asparagus, summer tomato steaks dotted with fresh mozzerella and basil and sweet balsamic molasses.

And what’s a party without some spirits? Chardonnay to Firefly’s, the cocktail and service were beyond reproach.

The food, the drink, and the service were all supplied by the Red Sky Cafe and delivered with a second helping of Southern Hospitality!!

Why would anyone settle for less?

The Outer Banks is a popular place for big events.  In fact, it is tailor made for weddings and parties.

When you have an important event coming up, how should you choose a caterer?

Here are a few tips:

  • Experience.  How long have they been catering both large and small parties?
  • Recommendations/Popularity. Are they the first choice for everyone else?  Do their past clients plan to use them in the future?
  • Food Sources. Where do they acquire their raw ingredients?  The choice of food sources will be easily tasted in the finished product.
  • Tastings. Do they offer the opportunity to taste the dishes before you make a final decision?
  • Staffing. Do they offer a full staff?  Chefs and wait staff are a must, but what about the clean up?
  • Clean up. You don’t want a dirty kitchen after the party.  Make sure this is part of your catering package.
  • Is your party special to them? You don’t want a caterer who is just grinding out jobs.  Ask your prospective caterer exactly how they will make your party an event to remember.
  • The unexpected. Can they handle any problems that occur?  Ask your caterer about problems they have had at past events and how they dealt with those problems.

Chef Wes Stepp On Channel 13 WVEC – Fathers’ Day Special

Chef Wes Stepp was recently on TV again, and this time he cooked for WVEC channel 13 for a Father’s Day special.  The video will make you crave this meal all year long.

Chef Wes cooks the “Bleu Moo”, a featured menu item and a popular Father’s Day choice.  This dish is guaranteed to please any man (and everyone else).

Chef Wes starts with prime cuts of filet Mignon.  These are seasoned with kosher salt and fresh ground black pepper, then sautéed in olive oil, garlic, and sun dried tomatoes.  Cabernet is added to the pan to give the filet an additional rich flavor.

He then places bleu cheese on top of the filets and allows it to warm, but not quite melt, as the beef finishes cooking.  The filet Mignon is served medium rare atop fresh spinach, summer tomato steaks, and sautéed Portabella mushrooms.

(Personal note – If you have never had prime beef with fresh spinach, you are missing one of the greatest flavor combinations on earth.)

If this wasn’t enough, fresh shrimp is sautéed in butter along with the filet Mignon.  A touch of fresh cream is added, and then the mixture is reduced to become a delicious sauce which tops Chef Wes’ creation.

This incredible meal is finished with stripped scallions for a beautiful presentation.
