Temperatures have finally hit a consistent low here in the Outer Banks – that usually means it’s Fall. Not only that, but it means it’s time for big flavor bombs, with enough body to sustain and warm our bodies.
It’s time for your food to go beyond nutrition and replenish your warmth. That’s what the theme for the new Fall 09 Red Sky Cafe dinner menu is all about.
Yesterday you saw chef wes cooking Rockfish, a staple of Outer Banks seafood, with a nice herbed goat cheese melt as the sauce for the Sundried tomato pesto.
That also goes to show how Seafood can (and should) be incorporated into winter dishes, including holiday dinners and Thankgiving. A beautiful piece of Rockfish can easily take the place of a chicken or pork dish, adding higher quality protein and much less calories.
